Spinach Salad with Blueberries, Almonds & Maple Lemon Dressing
Would you like a totally delicious way to fit more spinach into your eating plan? Try this salad. It’s one of my favourites. I make it all the time. When I serve it to company, they always ask for the recipe. It contains not one, but three superstar ingredients: spinach, blueberries and almonds. The dressing is fast, easy and definitely tasty. Enjoy!
Serves 2 to 4 people (two meal size or four side salads)
Salad Ingredients:
8 cups (2 L) spinach
1 cup (250 mL) blueberries
½ cup (125 mL) light feta cheese
¼ cup (60 mL) slivered almonds
Salad Dressing Ingredients:
2 tbsp (30 mL) extra virgin olive oil
1 tbsp (15 mL) fresh lemon juice
2 tsp (10 mL) maple syrup
¼ tsp (1 mL) freshly ground pepper
Please note: Toasting the almonds is optional, but it does intensify their flavour. For less calories and fat, use less feta cheese. For more lemon flavour, add lemon zest to dressing too.
Directions:
- Whisk together all salad dressing ingredients.
- Place spinach (pre-washed), blueberries, feta cheese and almonds in a large bowl.
- Gently toss salad with dressing and serve.
